After a long wait for these guys to bring their wine to market, today we launch our fleet of natural Colorado wine from Aquila Cellars in Paonia:

One thing we must all understand is that this was never about wine. At least, it was never only about wine. It’s about philosophy, principal and integrity. This was always about farming - but more about soil than plants, and more about listening than doing. This was always meant to be a lesson, not a lecture. This is definitely about energy and awareness of intuition. It was always about farming but also about people and relationships to land and to each other. It must be about imperfection. And perhaps if we have to wrap it in something, we can wrap it in the idea of terroir - a pure expression of time and place.

This is Aquila Cellars, where we craft what we market as natural wines but what Taras Ochota liked to call “beautiful wines”. We put the wine and the story and the people and the land in a glass and smell them all together. The bird songs and the laughter, the conversations, and the bees buzzing are there coalescing into something we like to call terroir - but we don’t really know enough to know anything about such a profound concept and just the glimmer into that thought makes it beautiful. We chase it, and we wait watching the glass as if it will give us signal of the perfect moment at which to take a sip. These are our beautiful wines of the year 2019.
